We are now seeking a talented, creative, and experienced Pastry Sous Chef to join our opening team. This is a rare opportunity to support the creation and execution of a distinctive pastry offering in a luxury restaurant from day one, helping craft desserts that leave a lasting impression and elevate the guest experience.
About the Role As Pastry Sous Chef, you will support the Head Pastry Chef in delivering a refined and inspired dessert offering that reflects the coastal elegance and Italian heritage of Sale e Pepe Mare. From reimagined classics to innovative signature creations, you will play a key role in ensuring excellence across every service.
You will lead by example, assist in mentoring the pastry team, and collaborate closely with the Head Pastry Chef and senior leadership to maintain exceptional quality, creativity, and consistency.
Key Responsibilities Support the development and execution of a world-class pastry menu rooted in Italian tradition and seasonal ingredients

Assist in leading, managing, and inspiring the pastry team, ensuring consistency and high standards

Collaborate with the Head Pastry Chef and Executive Chef on menu development and daily operations

Supervise pastry preparation and service, ensuring precision in plating and presentation

Maintain the highest standards of hygiene, food safety, and cleanliness

Assist with inventory management, ordering, supplier liaison, and cost control

Train, mentor, and support junior pastry chefs to foster growth and excellence

Ensure desserts consistently meet the expectations of a luxury dining environment

Requirements Proven experience as a Pastry Sous Chef or Senior Pastry Chef in a premium or luxury hospitality environment

Strong knowledge of Italian and Mediterranean desserts, with creativity and attention to detail

A hands-on team player who thrives in fast-paced, high-end restaurant settings

Strong organisational and communication skills

Ability to support, motivate, and develop a high-performing pastry team

Excellent attention to presentation, flavour balance, and consistency

Proof of right to work / settled or pre-settled status in the UK
