What you'll do To assist in the development of, and subsequently implement Trust policy and standard operating procedures for the catering provision across the Trust. To provide leadership and management to the catering teams and be responsible for their training, development, performance and conduct. To plan, control and deliver a first class, cost effective catering service every day, incorporating a varied range of healthy food choices and ensuring the effective provision of dishes to meet specific dietary requirements, including those required due to religious and medical reasons. To lead on menu planning, giving due regard to customer preference, nutritional standards, quality, variety and choice, portion control, and cost. To assist in recipe development, testing and monitoring of new and existing products. To ensure the implementation and application of effective monitoring and recording systems across the Trust s catering service to ensure that all associated legislation is met, including the Nutritional Standards for School Lunches and Other School Food,
and that all catering procedures and food standards are complied with. To ensure and maintain a high standard of food production, hygiene, storage and service. The Trust wishes to achieve and consistently maintain a level of five stars with the Food Standards Agency. To monitor and evaluate service and standards, including frequent checks on the personal hygiene of catering staff, dining rooms and kitchen areas and taking action where these fall below the high standards expected.
