Salary: £50k - £60k + Tronc + Bonus
Were seeking an ambitious, rosette-standard Executive Chef to take ownership of a high volume and high-quality rosette standard operation.
This is more than a kitchen leadership role its an opportunity to shape culture, drive commercial performance, and create a food offering that guests actively seek out. Youll combine culinary creativity with operational precision and team leadership, delivering outstanding dishes while running a disciplined, profitable, and compliant kitchen.
The Role
As Executive Head Chef, you will lead all aspects of kitchen operations, ensuring excellence in quality, consistency, team engagement, and financial performance.
Leadership Youll lead from the front, set the pace, uphold standards, and ensure every plate leaves the pass with pride. Your leadership will create a calm, focused, high-performing brigade.
Menu Development You will work closely with the General Manager and Head of Food, youll create seasonal provenance-led dishes that reflect local character and achieve 23 rosette standards. Youll balance creativity with commercial awareness and support the senior team in ensuring menus are innovative, deliverable, and profitable.
Team Development Youll maintain a motivated and skilled kitchen team through smart recruitment, structured onboarding, and ongoing coaching and training. Youll foster strong collaboration between BOH and FOH, creating a unified guest experience and positive workplace culture.
Commercial & Operational Youll take full accountability for kitchen P&L, including:
Food cost control and GP performance
Stock management and ordering (Procure Wizard)
Portion control and waste reduction
Supplier negotiation and compliance
Invoice processing and financial reporting
Youll drive efficiencies without compromising craft or quality.
Compliance & Standards Youll maintain exceptional standards in:
Food safety and hygiene
Allergen management
Health & safety compliance /Cleanliness and safe systems of work
About You
Minimum 3 years experience as Head Chef or Executive Chef in a comparable high-quality operation
Proven track record delivering 23 rosette-level food standards
Strong commercial acumen and cost management expertise
Inspirational, hands-on and approachable leader who thrives under pressure and enjoys motivating a team
Detail-oriented, organised and solutions-focused
Food Safety Level 3 (or willingness to achieve)
Flexible, adaptable and comfortable driving change
