The Opportunity: We are delighted to be partnering with this outstanding venue to recruit a Senior Pastry Chef de Partie to join their culinary team. Within this role you will craft exceptional desserts, pastries, cakes and more usually locally sourced ingredients. You will have full responsibility to run your own section, ensuring the highest of standards are maintained at all times. Responsibilities to include: Manage and oversee food production as directed by the Senior Team. Assist the Pastry Sous Chef in the planning, preparation and execution of new menus and ideas. Maintain high levels of communication between Senior Team and Chef de Parties at all times, in particular ensuring special messages & requests are dealt with promptly. Maintain the kitchen recipe manual and SOPs and manage production, quality, and consistency through its use. Ensuring the smooth running of the kitchen in the absence of the Sous Chef. To understand the menus and operating procedure of the kitchen and run your section accordingly. Ensure all HACCAP systems are followed, and due diligence is completed on a day-to-day basis by you and the team. We are looking for: Previous similar experience as either a Senior Chef de Partie or a Chef de Partie. Strong knowledge and skills in plated desserts, chocolate work and patisserie. Creativity and passion for modern pastry trends and techniques. Culinary education in preferred but not essential. Solid knowledge of culinary terminology and techniques. SVQ 1 & 2 an MVQ or equivalent qualification.
